The Katogi Averoff White is a multi-varietal dry white wine crafted from a blend of 50% Chardonnay, 30% Malvasia and 20% Muscat in the Metsovo region.
- Appearance: Pale yellow.
- Aromas: An impressive bouquet dominated by notes of white flowers and fruits, such as pear and banana.
- Palate: Light-bodied and refreshing, featuring crisp acidity and a clean, fruity finish.
- Vinification: Each variety is vinified separately to preserve its unique character. Muscat and Malvasia undergo pre-fermentation cold maceration at temperatures below 8°C for one night, followed by aging on fine lees in stainless steel tanks. Chardonnay is produced via direct pressing. It undergoes alcoholic fermentation in oak barrels, where it remains on its lees after fermentation for further maturation.
It perfectly accompanies seafood, grilled fish, green salads, light poultry dishes and soft white cheeses. Best served at 8°C - 10°C.
