DOTS Vidiano, from the Oenops Wines Winery by oenologist Nikos Karatzas, is a single-varietal dry white wine made from 100% Vidiano, standing out for its unique, natural approach. Although the winery is based in Drama, the grapes originate from selected mountainous vineyards in Heraklion, Crete. The "DOTS" series was named after the visual dot illusion on its label (pointillism), which reveals the name of the variety.
- Appearance: Bright lemon with green highlights.
- Aromas: Intense aromas of citrus fruits, white flowers, ripe stone fruits (peach, apricot), mineral notes (wet stone) and subtle spices are distinguished.
- Palate: Full and rich body, with a slightly oily texture that is balanced by a lively, elegant acidity and a long finish.
- Vinification: Whole clusters of grapes undergo immediate pressing in vertical pneumatic presses following careful sorting, followed by spontaneous fermentation with indigenous yeasts in four different types of vessels: clay amphorae, concrete tanks, large oak barrels (600L) and stainless steel tanks. Aging lasts from 6 to 9 months in old barrels, concrete tanks and stainless steel tanks, and concludes with careful blending before bottling without filtration, preserving the authentic, vibrant character of the variety to the maximum.
Due to its full body and lively acidity, it is an eminently gastronomic wine, ideally paired with grilled fatty fish, lobster with butter, mussel pilaf, pork tenderloin with mushroom sauce, linguine with langoustines, mushroom risotto, stuffed zucchini with egg-lemon sauce (avgolemono), sushi, as well as a platter of mature, rich cheeses (aged Cretan graviera, formaela, arseniko from Naxos). It is best served at a temperature of 10-12°C.
