Evil Eye by Nico Lazaridi Winery is a single-variety dry rosé wine produced from 100% Xinomavro grapes. In older vintages (up to 2023), it was released under the (PGI Macedonia) designation, whereas from 2024 onwards, it bears the (PDO Amyndeon) status, as the grapes are sourced from selected old Xinomavro vines in the Agios Panteleimonas area of Florina.
- Appearance: Pale rosé, with delicate salmon hues.
- Aromas: An intense and complex bouquet of tangerine, melon and tomato leaves, complemented by floral and herbal notes.
- Palate: Full-bodied with the characteristic, crisp acidity of Xinomavro, perfectly balanced by the creaminess developed during a 5-month maturation on the fine lees (battonage). It features a long and refreshing aftertaste.
- Vinification: Produced using the direct, gentle pressing method at low temperatures to achieve its elegant, pale color and vibrant citrus and tomato aromas. Its distinctive character stems from 5 months of aging on its fine lees (battonage), a technique that imparts creaminess, volume, and a rich palate, beautifully balancing the variety's signature crisp acidity.
Evil Eye performs excellently both as an aperitif and as a food companion. It pairs beautifully with Mediterranean and olive oil-based dishes, green salads, refreshing appetizers, fatty fish, seafood and fresh seasonal fruits. Best served at a temperature of 10-12°C.
