Alpha Estate Pinot Noir is a single-varietal red dry wine from 100% Pinot Noir grapes grown in the Amyntaio region (PGI Florina).
Appearance: Bright ruby.
Nose: Distinguished by its intensity, featuring notes of wild cherries, raspberries, mild spices and smoke.
Palate: It possesses a velvety texture, refreshing acidity and a mineral character that reflects the region's terroir.
Vinification & Aging: 4-day pre-fermentation cold soak followed by alcoholic fermentation using indigenous yeast flora (selected and isolated from the specific vineyard block) at progressively increasing temperatures with "pigeage" (pushing down the cap). The wine remains on its fine lees for 8 months with periodic stirring. It then ages for 12 months in new French oak barrels and an additional 12 months in the bottle. It is unfiltered and undergoes absolutely no treatment prior to bottling.
It pairs ideally with all types of white meat, from chicken to turkey, rabbit, pork fillet, and feathered game. It is best served at 16-18°C.
