Gi & Ouranos (Earth and Sky) from Thimiopoulos Vineyards is a monovarietal dry red wine produced from 100%Xinomavro, sourced from the PDO Naoussa zone. The grapes come from selected organic vineyards with vines over 40 years old. It is the flagship red wine of Apostolos Thimiopoulos and is considered one of the most important ambassadors of modern Greek Xinomavro worldwide.
Appearance: Medium to pale ruby.
Aromas: A complex nose dominated by red fruits (strawberry, cherry, pomegranate, raspberry). It is complemented by the variety's typical notes, such as tomato, olive leaves, dried flowers and sweet spices (cinnamon, clove).
Palate:Juicy and balanced with high acidity. Despite its robust structure, the tannins are "polished" and velvety, leading to a long and spicy aftertaste.
Vinification & Aging:Maceration lasts for 40 days using 40%whole clusters. Fermentation starts with indigenous yeasts and lasts for 2 to 3 months. Subsequently, it matures for 18 months in 500-liter French oak barrels (usually 2nd or 3rd fill to ensure the fruit remains the focus).
Aging Potential: Ready for consumption but can evolve impressively in the cellar for 10-15 years, developing tertiary aromas such as leather, earth, mushrooms and truffle. The acidity remains high, keeping the wine "alive." For aged bottles, it is recommended to use a decanter for at least 30-60 minutes to allow the wine to breathe and fully express its bouquet.
It pairs exceptionally well with red meat (beef, lamb), game and rich tomato-based or spiced dishes (beef stifado, moussaka, tas kebab, or pork with prunes). Best served at 16-18°C.
