APLA Rosé from Oenops Wines, crafted by oenologist Nikos Karatzas, is a multi-varietal dry rosé wine made from a blend of 50% Xinomavro, 30% Mavroudi and 20% Limniona. The winery is based in Drama, but the grapes are sourced from selected vineyards in Macedonia, Thrace and Thessaly respectively.
- Appearance: Pale salmon-pink (Provence style).
- Aromas: Dominated by red fruits (strawberry, cherry, pomegranate), hints of citrus (mandarin, grapefruit), as well as the characteristic tomato note contributed by Xinomavro.
- Palate: Rich, full-bodied, with balanced oiliness and a crisp acidity that gives it nerve, leading to a long finish.
- Vinification: Each vineyard plot is vinified separately. The grapes undergo gentle pressing in pneumatic presses after careful sorting, followed by fermentation in stainless steel and concrete tanks. It is aged for 2 to 4 months on its fine lees, adding texture, depth, and aromatic complexity.
Due to its unique vinification method and the high acidity of Xinomavro, APLA Rosé is a stunning gastronomic wine with body, structure, and flavor depth. It pairs ideally with baked fish plaki (fish baked with tomatoes and onions), octopus cooked in red sauce with ditalini pasta, shrimp saganaki with feta and tomato, pasta Napolitana, Pizza Margherita and smyrneika meatballs (spiced meatballs in tomato sauce). It also pairs perfectly with a platter of Greek cheeses (barrel-aged feta, Kalathaki of Lemnos, Graviera of Naxos) and mild cured meats (lountza). Best served at a temperature of 10-12°C.
