Assyrtiko 2023 by Argyriou Winery is a single-variety dry white wine made from 100% Assyrtiko grapes grown in Parnassos (PGI Parnassos).
- Appearance: It features a bright, pale green hue.
- Aromas: Intense aromas of lemon and lime dominate, combined with elegant notes of white flowers.
- Palate: Crisp and refreshing, characterized by vibrant acidity, a fresh mouthfeel and a medium finish.
- Vinification: The process involves pre-fermentation maceration, alcoholic fermentation at controlled low temperatures and two months of aging on the lees with batonnage to enhance its body.
Thanks to its crisp acidity and fruity, lemony character, it pairs ideally with grilled white fish (such as sea bass or sea bream), steamed shellfish and fried seafood, as it perfectly cuts through their richness. At the same time, it pairs excellently with Greek lemon-infused stews (like pot-roasted chicken or dolmadakia in egg-lemon sauce), traditional savory greens pies, fresh green salads and salty white cheeses like barrel-aged feta and goat cheese. Best served at 8–10°C.
