Ktima Gerovassiliou Xinomavro is a single-varietaldry rosé wine from the Epanomi region in Thessaloniki (PGI Thessaloniki).
Appearance: Pale pink (Provence style), salmon-colored and bright.
Aromas: Complex nose dominated by red fruits (strawberry, cherry), citrus aromas (pink grapefruit) and the variety's typical vegetal notes of tomato.
Palate:Rich body with excellent acidity providing freshness and a slightly oily texture due to short aging on its lees.
Vinification: After crushing, the free-run juice is collected without maceration and fermented in temperature-controlled stainless steel tanks at 18 °C. The wine remains on its lees for several months.
It harmoniously accompanies dishes such as lobster pasta, shrimp "saganaki" with tomato,pasta with meat sauce (bolognese), traditional Greek vegetable stews (ladera), summer Mediterranean flavors and spicy Asian cuisine. Best enjoyed at 10–12 °C.
